Braised Peas with Lemon Zest Oil and Chives

If you think peas are boring, think again! This recipe has been adapted from one that Jamie Oliver originally created. It is a great side to almost every type of meal you could imagine.

Ingredients

1 knob of butter

Cockatoo Grove Olive Oil – Lemon Zest

1 heaped tablespoon plain flour

1 cup vegetable or chicken stock

400g peas (fresh or frozen)

1 tablespoon of chives

 

Heat the butter and a splash of Cockatoo Grove Lemon Zest Olive Oil in a pan on medium heat. Add the flour and stir quickly to combine.  Slowly pour in the stock and continue stirring to avoid lumps. Turn up the heat and add the peas and chives. Add some salt and pepper and put a lid on.  Simmer for approximately 5 minutes or until the peas are tender. Add further seasoning if required and serve with another splash of Cockatoo Grove Lemon Zest Olive Oil. Transfer to serving dish and serve immediately.
